pork recipes turning pork while smoking

I am new at this so I am wondering; In most of your recipes you say to put it in the smoker and smoke for three or four hrs. Does it need to be turned over once or twice in this time or just put in and left.

It depends on your smoker and your meat. If your rig has hot spots, absolutely. If you have a moisture source under the meat, consider turning if the bottom looks "soggy". If you're cooking something with a lot of fat on one side, best to keep that side up.
