I would go by the "use by" date on the package. The USDA recommends that fresh pork be kept in the refrigerator no longer than 3 to 5 days before it's cooked or frozen. However, much of the pork you'll find at the stores has been "enhanced" with a preservative, similar to a brine, which extends the shelf life quite a bit. Just go by the label and you should be fine.
