Propane Meat Smoker Recommendation

by Mark
(NOLA)

I am a novice smoker and have not bought a unit yet. I'm thinking that I'd prefer gas. I want a good quality unit under $250. I would also like a good cook book- do you sell any of these? What type of smoker would you recommend that I get?

Brinkmann Smoker
by: Bill

Since you're just starting out, I'd recommend that you start with a Brinkmann Smoke 'N Grill Gas model. I recently saw one at our local Ace Hardware store for about $70.(online at americasbestbbq.com it's $160.) You'd need to buy a propane tank if you don't have one already. Replace the temperature gauge with one that shows the actual temperature, instead of low, medium, and high. That way, you'll know exactly the temperature you're smoking at. That'll cost around 10 to 15 bucks. And get a bag or two of smoking wood chunks. You should still be under $250 after getting the smoker and accessories. If you can afford it, purchase a remote meat thermometer. With it, you won't have to open up the smoker lid to check the meat temperature. Every time you open the smoker up, you need to add 30 minutes on to the time. It's best to open the lid only once or twice (if at all) during smoking.
This model will smoke 2 briskets easily. It says up to 50 pounds capacity, but that's overdoing it in my opinion. Probably 30 pounds max. You could get 8 slabs of ribs in it no problem if you had rib racks.
For a good book on smoking, I'd start out at the local library if you have one. They usually have lots of books on smoking, grilling and bbq'ing. One of my favorites is "The Smoked Foods Cookbook" by Lue and Ed Park.
It's got a lot of great smoking information, and if you want to buy it, it's about 15 bucks at Amazon.com.
