Propane Smoker Running too Hot

by CO SMOKER
(Fort Collins )

I suppose its possible my thermometer is off, but I can't get the smoker to run below 275. I have a rack of St Louis spare ribs in there right now, but might take them out and finish in the oven if I can't the temperature to come down.

Am I not venting properly? Heat setting is on the lowest it will go and I am running a pan of water. Any suggestions are appreciated!

Try filling the pan with cold water, and cracking the door or lid open slightly to let some of the heat escape.

Put an oven thermometer on the grate next to the meat so you know exactly the temp the meat is smoking at. Your lid thermometer may very well be off, and its position isn't next to the meat, anyway. It might be hotter in the smoker where the thermometer is.
