quanity of hickory chunks

I'm going for my first smoking in the morning. A 7lb beef brisket. I plan to use a charcoal bed and hickory chunks with a few apple chips about every two hours. I have a small grill/smoker 30x18x10deep. How much wood chunks should I use. Should I put my heat in one side and meat on the other or heat under meat.

Get a pile of charcoal going on one end of the grill, then add the chunks of wood every so often. Wrap the wood in foil, and prick a little hole in the top before setting it on the charcoal. Otherwise, the wood will burst into flames, and the temperature of the grill will skyrocket.
Place the meat on the opposite end of the grill, and rotate it 180 degrees every hour or so. That will help it cook evenly.
You'll need to experiment with the number of charcoal briquettes to use to get the temp you want in the grill, and that will come only with experience.
