Recooking Undercooked Pork

Ok-I wish I would have found your site sooner. I am doing pulled pork--I cooked it to 180 degrees and pulled it but it is not as tender as I want this. I will be reheating it for a party--will it continue to cook and become more tender in this process or has the damage been done?

If it's been cooled properly, it will be safe to bring the wanna be pulled pork up to a higher temp to tenderize it more. I recommend having it wrapped in foil and baking it in the oven, at 300 degrees, until the temp of the pork reaches 195, more or less.

The overall texture of the meat will suffer somewhat, but with some sauce and beer, I doubt anyone will notice.
