Rib Preparation Step 10

Let The Seasoning Soak In

In rib preparation step 10 make sure that all surfaces of the slab are seasoned. Roll the ribs and wrap them in plastic wrap to rest for a couple of hours. The dry rub flavors will absorb into the meat during this rest period.

Be sure to hit the edges of the sparerib slab with some of the dry rub mixture. Sprinkle a little on the cutting board and press the edges of the slab right into it.

Rolling the ribs makes them easier to handle, and keeps the dry rub in place as the ribs rest. Sealing the slabs in plastic wrap works well, as does placing them in gallon size food storage bags.
