Let's Eat! With rib preparation step 12 the slabs are cut into individual pieces and served. A couple of nice smoked side dishes would be a great accompaniment to your tasty pork ribs.

It's important to allow the smoked ribs time to rest after being removed from the smokers. Immediately after taking them out, wrap them with foil and place them on the kitchen counter for 20 to 30 minutes, covered with a dry towel. During this rest period the juices will redistribute through the meat, and they'll be moist after being cut. Without a rest, the juice will run out when the slabs are cut.

A batch of homemade barbeque sauce would be the crowning touch to your perfectly smoked slabs of perfectly prepared spareribs. Enjoy!
