Removing The Membrane From The Slab
In rib preparation step 5 the tough membrane that lines the inner body cavity of the hog is removed. This membrane, also called the fell, is peeled off for two reasons.

When the fell is removed the meat between the rib bones is exposed to the marinade or rib rub being used for flavor. Removing the fell also makes the ribs more palatable, since the fell can be rather tough and chewy.To remove the membrane, begin by slipping a dull instrument like a screwdriver or butterknife between the membrane and the meat. I normally use the handle end of a fork or teaspoon. Gently pry the membrane loose.
