Rib Preparation Step 6

Removing The Fell

The fell is peeled off the sparerib slab in rib preparation step 6. In the previous step, the fell was loosened from the bony side of the ribs using a dull instrument.

As you can see in the picture above, the membrane, or fell, peels of fairly easily with just a small amount of effort. Grasping the membrane with a kitchen towel or paper towel makes the job much easier.

Sometimes the fell will tear, requiring that you use your dull tool to start it again. And sometimes you get lucky and the fell comes off in one piece.

It's important to mention that there are actually two membranes on the bony side of the ribs. The top, rubber-like layer is the only one you want to remove. The whitish layer against the meat fibers is left on.

Don't remove the fell if the ribs are going to be hung by hooks in a vertical smoker. The fell will help support the slabs as they hang in there a smokin'.
