Rookie Smoker

I have a char-broil H2O electric smoker that my wife bought at a garage sale, so there were no instructions. I love to grill but this is my first time using a smoker, and I've already started. I'm smoking a 7 lb pork butt and have put water soaked apple chips in the bottom pan, which is on top of the electrical heating element. Is this ok, do I need to replentish the water or chips in the pan?. Do I need to spray the meat with liquid? How long should it take? Also, if you have any other helpful hints, it would be most welcome.

Charbroil electric - How To Use

With vertical electric smokers, the bowl shaped pan is actually a water pan, and should be hanging up above the heating element, going on the clips that hold up the lower rack. The lower rack sits right on top of the pan.

To add smoke wood, wrap a handful of chips, dry or soaked, in foil and lay the pak next to the heating element. The wood will put out smoke for a short amount of time, but don't feel like you have to keep adding wood.

The electric smoker is sealed, so the smoke is trapped inside. For that reason it only takes a few additions of wood for most foods.
