Yes, you can use canning salt, too, but use 2/3 the amount because there's more canning salt per cup than there is kosher salt per cup. Kosher salt is large grained and "fluffier".

If the recipe calls for one cup kosher salt, use 2/3 cup canning salt in its place. Table salt can be used too, same measurement as canning salt. But use non-iodized salt, because iodized salt might add off flavors to the chicken.
