Shrimp Taco Wraps
| For a fun meal try these shrimp taco wraps. The seasoned shrimp-in-a-tortilla are nutritious and flavorful. Or as Mom would say, "They're good for you and tasty too!". |
Grilled Shrimp TacosThis recipe makes six to 8 tacos.
INGREDIENTS
- 1 pound medium or large shrimp, deveined, peeled, tails removed
- 1 tablespoon prepared taco seasoning (in the foil pack)
- Flour Tortillas
- Cooked rice, Spanish rice preferred
- Shredded Monterrey Jack cheese
- Taco sauce
- Guacamole
- Sour Cream
Season the shrimp with the taco seasoning, then grill over medium heat for a few minutes until done. You'll know they're done when the color changes from a translucent gray to white. Take them off as soon as they change, 'cause overdone shrimp are tough little things.
When you're grilling shrimp, especially the smaller ones, using a grilling basket makes life a whole lot easier.
Grill baskets are usually made from stainless steel, perforated so heat can easily radiate through. The perforations are small enough that the shrimp can't fall through.
Making Shrimp TacosThis is the fun part. Just lay out a flour tortilla, spread on some guacamole, add a few shrimp, then top with rice, cheese, sour cream and taco sauce.
Fold it over and you have a shrimp taco! Or if you roll it up, you're eating a grilled shrimp burrito.
