Smoked beef steak nuggets

I'm looking for a recipe for smoked beef steak nuggets. I have bought some (Tillamook) and liked everything but the price. I haven't tried to make my own recipe yet so I thought I'd give this a try. I have a propane fired Cabela's smoker, I've smoked prime rib and jerky. The smoker smokes too hot for jerky, you really have to watch it.

If you are making jerky, do NOT use a water pan. Even if it running too hot, you are not trying to add water into the meat like you would with something succulent like ribs. This will only make the meat cook without drying out. I would recommend a Big Chief or maybe leaving it open slightly.

Good luck, I came looking for a nugget recipe too.

Steak Nuggets Sound Good

Never had a steak nugget, but if they're anything like jerky it should be no problem. Try using a mild jerky brine recipe, then smoke them until done.

You can make your smoker run cooler by filling the water pan with a lot of ice and some water. That will suck a lot of heat out of the smoker. Also crack open the lid or door to prevent heat buildup and to promote circulation.
