For the chicken wings, I would first smoke it for 1-2 hours and then put it in the oven or on the direct grill while basting it with the liquid it sat in the night before.
This will give it a good smoky taste and crispiness too.
The marinade/paste/rub can be a combination of pepper, salt, Hot chilli, Paprica , brown sugar, garlic, honey, thyme. The amounts are not exact anyway so you need to experiment.
The turkey legs are less appealing to me so I will not comment.
