smoked food has oversmoked toxic taste

What causes my smoked meat to have an oversmoked, almost toxic taste? I'm using an electric homemade trash can smoker along with Kingsford hickory chips. Could it be that I have no chimney?

Smoked Food Ruined by Creosote
by: Rick

When smoke wood smolders at too low of a temperature, the smoke is very dense and contains creosote. Creosote is what gives smoked food the chemical like, tongue numbing characteristics, and it's not something you should be putting in your mouth. Using too much wood at one time can cause this problem. Try using less wood, and make sure it's close to, or right on top of the heat source so it makes smoke more quickly.
