smoked goose

I am looking for a good recipe for smoking a whole goose! Any thoughts for marinades or brines? I plan on using pear wood soaked in apple juice for the smoking!

Smoked Whole Goose

Smoking a whole goose sounds like it would be tasty. Poultry can be smoked well up to 300 degrees, and that's what I'd recommend for smoking goose. The higher temperature will help render out the fat under the skin.
