Smoked suckling pig

I'm smoking a 20 lb suckling pig for Christmas dinner, but don't know what to serve with it. I don't want a Luau theme. Any suggestions?

I admire your ambition! Good luck and hope it all goes well for you.

I'd go with traditional sides of slaw and maybe some fruit, roasted fruit could be good. You want to balance the salty sweetness of the smoked pork with some acids...so an apple cider-based slaw could be nice. And either traditional southern-style corn bread (not the sweet style) or use a simple soft bun and treat it like the Chinese do some duck dishes, so that it is served in pieces with pancakes or rolls.

And I think some 'dirty rice' could be good with it. The pork will have a certain heaviness to it so adding traditional potatoes or such could really weigh the guests down.
