Smoked Teriyaki Chicken

by Jim
(Yosemite CA)

I'm cooking for a friends wedding Saturday. Today mother of the groom asked me if I could do some teriyaki chicken as some of them would like it rather than my BBQ. They think it is too spicy (not even). Will a teriyaki marinade work in the smoker? I don't really have time for a test. Any help?

Teriyaki sauce is a great marinade for smoked chicken. One that's lower in sugar is a better choice to prevent ending up with a burnt sugar flavor. Try adding some chopped green onions and garlic to the sauce to add more flavor. Marinate for 24 -48 hours for best results.
