Over the past few years, many smoker cooking testimonials come my way through my contact form. It's open to anyone for comments, suggestions and questions. I love getting any kind of feedback through that form, and I get some almost every day. In fact, it usually makes my day.
Out of the hundreds I've received, here are some of my favorites. Let me just say that it means the world to me that you fine folk take the time to thank me and to give me positive feedback. It makes my job all worthwhile.

Yesterday, I followed your instructions on smoking spare ribs to the letter. The results were completely amazing! My partner and I ate half the ribs last night, saving the other half in the fridge wrapped in foil. Tonight we warmed the second half in the oven for 30 minutes without unwrapping it. With the overnight rest and rewarming, the ribs were even better than before!
We've decided that it was the best meal we've ever eaten, surpassing our previous favorite -- Thanksgiving dinner at the Praline Connection in New Orleans in 2005.
Here's the rub we used for the ribs: One tablespoon each onion powder, garlic powder and dried lemon peel. Two tablespoons each chili powder, coarse ground red pepper/black pepper blend and paprika. One teaspoon ordinary table salt.
Table sauce was unnecessary, although we did experiment a bit. Sweet Baby Ray's regular sauce was the only one we had that really tasted fully compatible with the rub.
Anyway, thanks for the great information. We haven't decided what our next project will be. Maybe the next time we see a good deal on wild salmon fillets...
Just wanted to pass along how good the smoked almond recipe is. I should have taken your advice and made a double batch. I had trouble keeping the wife and kids from eating them all.
Thank you! I have tried to smoke brisket several times and it was barely edible. I decided to try one more time and began searching for tips and thats when I found your website. I followed your instructions to the letter and made one of the most tender and juicy briskets I've ever eaten. I can not thank you enough. Just wanted to let you know the pork chops came out great not too salty after the using the grey sea salt the chops were nice and moist after 3 hours of smoking I did rinse them after brining just in case.Thanks for your advise.
