Smoking 15lb pork shoulder

I'm having a family reunion, and I 've decide to smoke a 15lb pork shoulder in a charcoal smoker. how long will this take? I 'm guessing an 1hr1/2 a pound Can I smoke it for half the time the day before? then refrigerate it and finish smokin it the day of the reunion? any suggestions would be appreciated need an answer a.s.a.p.! thanks!!

A pork shoulder takes a long time to smoke, and 1.5 hours per pound is not unusual. It's not a good idea to partially smoke food, and then finish smoking it at a later time. Too much chance for bacterial growth. If it's partially smoked, it might never reach a high enough temp to kill bacteria.

You could smoke it partially, then finish it in a 300 degree oven the day before, and refrigerate it when completely done. Then you can rewarm it the next day before serving.
