Smoking 2 different meats Masterbuilt Smokehouse

by Tracee
(MN)

Hello!

Today I purchased a Masterbuilt 30" Electric Smokehouse. (I am a COMPLETE "smoker rookie," so went electric...dont make fun!) Can you please tell me if I can smoke two different meats (say, a turkey AND a brisket) at the same time? (naturally, keeping any difference in cooking time in mind by putting one in later than the other) Or is cooking two different meats at once not recommended? If you feel it's ok to do, would I need to rotate them during cooking at all?

Would smoking two different meats at once add to the cooking time of these items? If so, how would I compensate?

Sorry...rookie, here!

Thanks for your time...and your website! Love the tips and recipes and cant wait to try them!

Brisket above Turkey
by: zach

Don't know how old this post is, if you have already smoke your turkey and brisket, but NO, do not put the brisket closer to the Heating element and the Turkey above. You want the Turkey below. Turkey/poultry is not something you want dropping on the Brisket for food contamination safety.

different meats

You need to stack meats accordingly as drippings will fall down. You don't want undercooked poultry dripping on a brisket that will have to cook longer. Food safety would require the brisket be above the turkey. The only issue with that would then be the brisket dripping on the turkey and while food safety is not an issue, the drippings might impact how the appearance of the turkey comes out with that nice dark skin. other than simple considerations like that, it is normal to smoke various meats at the same time. While you can fit a decent amount of meat in there, you want to make sure not too overcrowd the smoker. You need to allow room for the warm air and smoke to circulate. also, try to keep your meat in the center as the walls of the unit will retain more heat and be hotter, and result in crispy, possibly burnt edges before the center is cooked. just experiment and have fun. you will learn. the great thing about this device, at least with my experience, is that i can put a brisket or pork butt, both low maintanence meats, in the smoker overnight and wake up to almost done meat. super time saver.

Would you recommend putting the brisket closest to the element and turkey above?

Simultaneous Smoking of Meats
by: SmokerBill

As long as you are aware of the different lengths of time each food requires, and be aware of how the drips from one meat might affect the flavor of another, you should be alright smoking two different meats at the same time.
