Smoking catfish on a weber dome charcoal grill

by Doug
(Oslo, Mn)

I have always wanted to try smoking catfish on my weber grill but i dont have a brine recipe and have no idea how to smoke the catfish. I was wondering if anybody has a good brine for catfish and what i would have to do to smoke the fish on my weber grill with oak wood chips preferrably.

Smoking catfish - GOOD

We do the catfish the same as we do salmon and waleye on our Brinkman smoker: We soak the fish overnight in salt water (regular table salt) then drain over sink on a wire rack. Meanwhile get the smoker going and we put the fish on foil sprayed with a little oil (pam) it is delicious this way, especially cold the next day. We also use a beer in the water pan with water. Good Luck!

firmness or fishiness

I have found that if you use fish from COLD water works best...late in the season after the water warms up..fish become fishier and less firm.

Ex: I use only winter caught northerns for canned fishing. Very similiar to pickled herring.

Smoking catfish
by: Mike

I have not had good success with smoking catfish.

The flesh seems to not be firm enough as compared to trout, salmon, and panfish.

I would like to try it again if anyone has tips on smoking catfish
