smoking in a gas grill

by Tim
(Ohio)

Gas grills are typically pretty vented...when I tried my first smoking It looked like most of the smoke was escaping instead of staying in the the grill and around the meat, is this a normal thing or do I want to trap the smoke as much as possible and any ideas on how to do this??

Although you can get some smoke flavor in a gas grill, it's probably the most difficult appliance to use for real smoking. The whole design is built upon very hot, very fast cooking. My honest assessment is you can get far better results using a hotplate, cast iron pan, a little sawdust and a cardboard box than any kind of gas grill setup. Save the gas grill for steaks and burgers. That's what it's made for.
