Smoking Meat In Winter

We bought a smoker at the end of last season (during a great sale) and have used it a few times. I've loved it and everything we've made in it, and was wondering - how hard is it to smoke durng the winter?

mine is not a comment but a question, has anyone tried to insulate the smoker with high temperture insulation so a steadier heat can be maintained.

Dry Wood

Using dry smoking woods in the smoker will help to increase the temperature rapidly. In addition, it's helpful to experiment with different charcoal types to find the ones that burn very hot. I prefer Kingsford brand Charwood. It burns hot and clean, so be sure you have plenty of SOAKED wood to promote smoke production on hand.

Winter Smoking

The only difference you'll encounter when smoking meat in the cold of winter is that you'll need to add more heat to the smoker. You didn't say whether your smoker was wood fired, gas, electric or charcoal, but that doesn't really matter.

The only thing you'll need to do (other than wear heavier clothing) is to make sure the smoke chamber is at the correct temperature for whatever you're smoking. Burn a larger fire, use more charcoal, or increase gas flow to the burner, and your food will taste as good in winter as it does in the other seasons.
