Smoking New Zealand lamb chops

by Rod T
(Charleston, SC)

I have a Brinkman electric smoker that has a fixed temperature of approximately 250 degrees F. I would like to smoke (4) racks of New Zealand lamb chops that have 6 small chops on each rack. The oven times include 15-18 minutes at 425 degrees and I was wondering what the smoker time would be?

Thanks in advance.

Time For Racks Of Lamb
by: SmokerBill

I've never smoked racks of lamb like you have, but for the size they are, and the desired temperature they should be when done (medium rare would be preferred, about 135-140 degrees), it should take approximately 2 hours.

There are too many variable to give anything but estimates regarding smoking time.

Use a good remote thermometer and remove the lamb when its internal temperature is 5 degrees below the target temperature you're looking for.

That's the way to go. Chuck the clock and buy a thermometer.
