smoking pork butt in vertical smoker

I'm a first time smoker and am having problems. It's a charcoal/wood upright smoker it has a coal/wood basket and a water basket. I am trying to cook a 10lb butt and am having to add coal and wood constantly and temp is not high enough. The temp keeps dropping below 175dg. The pork is at 125 deg after about 4hrs of cooking I don't know if the pork will even be safe to eat even if internal temp gets up there....please help me!

Try to get the fire going really well, Get a good pile of coals going, then add your smoke wood.
Yes you will have to add wood every 1/2 hour.
you will heve to play with it. to get it right.

Some tips...

Make sure your butt is at room temperature before you start to cook.

Start with hot water in the pan.

Use more fuel and pre-heat your smoker.

Don't open the door or lift the lid too much (if you're lookin' it ain't cookin')

Keep the smoker out of the wind.

If you still can't get it warm enough, put a good smoke on it in the rig, then finish it to temperature in your oven.

What kind of smoker is it? I use a WSM and don't have the same problems.....unless you didn't put enough charcoal in the basket to start with.
