Smoking salmon on a small weber grill

by scott

I live in an apartment and don't have room for a grill and a smoker. So, can I smoke salmon on my small Weber grill - it's a "Smokey Joe" I think. I'm not sure how.

Smokey Joe Smoked Salmon

Sure, you can use your small Weber kettle to smoke salmon. Use a small amount of charcoal, 15-20 briquettes or so, and position them in a pile to one side of the charcoal grate. Place a foil wrapped handful of dry wood chips (dry so they smoke quicker) right on top of the hot coals.

Place the cooking grate in place and put the salmon on the opposite side of the grill, away from the charcoal. The lid vent should be positioned directly over the salmon. Leave the air intake on the underside open about 1/4 of the way to start. That should allow enough air in so the charcoal continues burning.

Continue cooking the salmon until it can just be flaked with a fork. Larger pieces of fish might require a second addition of charcoal and wood chips. Keep the lid on the grill as much as possible, too. Opening it up lets all the heat out, and extends cooking time quite a bit.
