Smoking Seafood

I have a commercial smoker in my restaurant, My question is if I smoke shrimp in the smoker on sheet pans will that change the flavor of the brisket, chicken or ribs, after the smoker has been cleaned?

Please reply as soon as you can. Our Chefs organization is doing a dinner for our local food bank and we would like to do a smoked shrimp mousse in Prime Rib for the entree.

Shrimp Flavor Transfer

I don't think you'll have a problem, since the shrimp will never actually touch any part of the smoker. Also, it won't take very long to cook the shrimp so there won't be much time for the shrimp flavor to "contaminate" the smoker interior. Once you clean the smoker, everything will be fine.
