smoking with soaked pecan shells

by Chon Salinas
(Defiance, Ohio, USA)

Has anyone heard of smoking meats(briskets) with soaked pecan shells? I've been saving my shells all winter. Does anyone know what kind of flavor this will impart?

Thx for any info.

Pecan Shells is the best. NEW
by: Troy

I work at a pecan company and I get pecan shells to barbecue with. They are the best. I grilled some steaks and ribs and chicken and when the coals got white I put my pecan shells on the coals and mesquite chips and put my meat on and closed the lid down and all the hole and let that smoke flavor from the pecan shells and mesquite chips soak in that meat for a hour. then open the hole up. When that meat was finished that was the best tasting meat I ever had. Try it or let me know if you need some pecan shells.

Just used pecans and shells in smoking
by: SouthernPatriot

We just concluded a large smoking with smoked meat loaf, Jamaican Jerk chicken, Polska Kielbasa, Boston Butts, pork shoulders, whole raw hams, and tomorrow we will do ribs. All were smoked with Louisiana whole pecans, Louisiana whole pecan shells, and plum and peach fruitwoods. Everyone loved the food today and tomorrow will be even better! The pecans burn at a hotter temperature than the fruit woods and burn to a very fine "face powder" type of ash which just about disappears. We will be smoking the ribs tomorrow for the great returning American heroes--wounded U.S. military.

Pecan Shells
by: Montz Pecan Co.

Howdy, my family has a commercial pecan orchard outside of Wichita Falls, TX and we've been using pecan shells for years. I love the smell of shell even more than the wood. I think the shell gives a different flavor because of the oil it absorbs from the nut. If you need some I can ship you a bag. Email me at montzpecans(at)aol.com also visit our store website, Pecanshed.com

Happy smokin'

smoking with pecans/shells
by: Anonymous

I have used both whole cracked pecans and just shells. Have had great luck with both soaked and dry. If you can find some smaller "seedling" nuts they usually have more oil and pass on the flavor better. Any of them are good, I have 50lb. sack I keep just for that. Crack em as I need them.

Pecan shells...a good choice for smoking
by: Southern Patriot

You can smoke with whole pecans, or with pecan shells soaked in water. The longer they are soaked the longer they last in the smoker. We have used almost every kind of wood over the years, such as oak, hickory, pecan, peach, apricot, plum, macadamia, kiwi, orange, almond, walnut, and others. Pecans and pecan shells must be used sparingly. We have combined them with fruit woods and always had a great result on whole chickens, chicken leg quarters, lamb, goat, brisket, whole hog, pork shoulder, etc.

We use many pecan shells since we use many pecans in our pecan pralines we make for a local charity. The type of pecans and pecan shells we have found makes a difference as well. The Georgia, Alabama, Mississippi and Texas pecans and shells are dryer and need to be soaked and burn up faster. The Louisiana pecans and shells have more pecan oil, and are used by the best candy makers and the shells impart a richer flavor but must be used more sparingly.

Pecan Shells for Smoking Meat
by: SmokerBill

I haven't tried pecan shells myself, but have heard that they work well for smoking meats. They can be a little on the intense side, and might cause bitterness if to many are used. Try a couple of handfuls the first time and see how you like the flavor, and adjust the amount next time accordingly.

I have a bunch of pecans in my kitchen cabinet. I need to shell them out so I can try it myself!
