Early Morning

I have to say that one of my favorite things about smoking(other than eating the results) Is when I am preparing for a major smoke. The anticipation prior to smoking a nice large Brisket is amazing. So much thought goes into the preparation. And then, getting up in the early morning on the day of the smoke. I love being the only one in the neighborhood up. All is quiet as I prep the smoker and get the charcoal going in the chimney. Sitting on the back steps with my coffee and waiting for the coals to peak, then adding them to the smoker. Then after a few minutes, the prized piece of meat makes it's way to the smoker. All I can say is I love the smell of Hickory in the morning!

Eating Smoked Meat Like Watching a Fire

Smoking Meat
For me, the pleasure I get from eating smoked foods is similar to what I get when I'm watching a campfire. It's like it brings back some long forgotten memory, some feeling from way back in the past.
Maybe it's some kind of genetic knowledge, learned from countless generations sitting in groups around fires, eating foods (smokey foods) cooked over those fires. And maybe the memories of the fires, the smokey food, and the togetherness are seated deeply in our genetic makeup. And maybe that's why smoked foods are so satisfying to eat.
