Trouble maintaining temps

by jason
(las vegas)

I'm new to smoking and my temps fluctuate between 300 and 150 degrees. I can not maintain a good smoking temp between 225 and 250. My charcoal seems to burn very fast. I have adjusted the intake and exhaust chambers but continue to have issues. Can anyone help?
thanks,
jason.

Maintaining Smoker Temperature

It sounds to me like your charcoal is getting too much air, causing it to burn too quickly. Not sure if you have a pit smoker, with a side firebox, or a vertical charcoal smoker, but I get the feeling it's a pit.

Make sure the intake vent on the firebox is working correctly, and that it seals well when closed off. It's more likely the problem is because of a poorly fitting door on the firebox. If it's not sealing well, it'll let too much air in and the charcoal will burn too fast. It's possible the door is twisted a bit; if so, try gently twisting it back to square.
