Turkey Brine With Zatarains Crab Boil

by David Wallace
(Myrtle Beach SC)

Not so much a question but what I am doing at this moment. One pot 1 gal water 2 cups kosher salt 1 cup white sugar.
Other pot 1 gal water 1 bag Zattermans crab boil a little powdered garlic and a little powdered ginger. That is it. I have boiled chicken parts in Zattermans for 10 minutes the tossed on grill with any old bbq sauce before and it is great. Do you think I should take the spice bag out or leave it in for brining?

Leave the Spice Bag In or Not?
by: Bill

If I understand you correctly, you are combining the crab boil water (that you flavored the chicken in) with the gallon of salt water, then use that as turkey brine.

If that's the plan, I think I'd take the crab spice out. Since the spices were boiled for a while, I imagine that a lot of the flavor has already been extracted. And it's possible that if the bag is left in during brining, the crab spice flavor could end up overpowering the other seasoning flavors of the brine. I'd take it out.
