Turkey Chili Recipe

If you have turkey leftovers, this turkey chili recipe is a great way to use 'em up. This hearty dish can be made as mild or as spicy as you like by adjusting the amounts of pepper used.


The thing that makes this one of the best chili recipes around is that it's made with smoked turkey. Chili with a hint of smoky flavor is a real treat!

Smoked Turkey Chili

INGREDIENTS
1/3 cup each of green, red and yellow bell peppers, chopped
1 cup chopped yellow onion
1 teaspoon chopped garlic
2 tablespoons vegetable oil
4 cups white beans
4 cups chopped tomatoes
4 cups diced smoked turkey
1 cup chicken stock or homemade turkey stock
1 tablespoon mild chili powder
1 teaspoon cayenne pepper (optional)
1 teaspoon salt
Chopped green onions, with tops (for garnish)

Saute the bell peppers, chopped yellow onion and garlic in oil over medium-high heat until the veggies are just tender. Combine the cooked veggies with the remaining ingredients (exept the green onions). Bring the turkey chili to a boil, then reduce the heat. Simmer for one-half hour, stirring occassionally.


For a spicier chili, try substituting the mild chili powder with hot chili powder. And for more heat and a smokier flavor, add one or two teaspoons of ground chipotle peppers to the turkey chile. Chipotle peppers are smoke dried jalapeno peppers. Their heat and smokiness add a lot to a variety of dishes.

Serve the chili garnished with some chopped green onions. A dollop of sour cream and a sprinkle of cheddar cheese make great toppers for this turkey chili recipe too. A big bowl of this will keep you warm on a cold winter night!
