Turkey Leg Splinter Bones

I once got a smoked turkey leg and it was great. Since then all the turkey legs have had lots of splinter bones. What is the difference in the turkey legs and why do some have these splinter type extra bones?

From what I can find, the Turkey Legs that have the splinter bones are from older Turkeys. I have not found anything about the different breeds(colors) of Turkeys or the difference between wild and domestic Turkeys. I found an article that stated the tendons in older Turkeys ossify and become splinter bones. In my experiences, bones from any fowl(bird) should never be fed to dogs because these bones tend to shatter into slivers that dogs will swallow. Cats tend to chew these bones more completely before swallowing them.

When the turkey leg is done smoking, trim around the bone end where the gristle is, then find and pull the splinter bones out. If the smoked turkey legs are cooked properly, they'll slide right out, leaving you with splinter bone free smoked turkey drumsticks.

We just looked here to see what was going on in the turkey leg because our neighbor's dog almost died from eating one on Christmas. It was poking out of the intestine and he was bleeding internally. They took him to the emergency vet where he almost died.I know, not much help...just thought we'd share.
