Variety of Food

by Rick
(Lexington, KY)

Just received my first smoker and excited to dive in. Is there a good method to say cook a turkey, fish and maybe hamburgers in one cooking? I have read that the smoke flavor is distributed early in the cooking process so I'm concerned that the fish and hamburgers might not get much flavor. Thanks for your help in advance and Happy New Year!!

smoke turkey
by: steve

just to let you in on my very first turkey. a 13# to start out with. it was frozen due to thats all the store had. i thawed it slowly in a sink of cold water. afterwards i removed the giblets and neck then filled the cavity with some onions, bell peppers, lemon slices, and mild green peppers. i then tied the legs together to close the cavity somewhat. temp at 225 for 6.5 hrs. i use a mastercraft electric smoker. also i filled the water pan with apple juice. pretty good and quiet moist and tender. hickory chips were my choice of wood. hope this helps anyone that's interested in trying a turkey.

Smoking Salmon With Turkey
by: SmokerBill

If you wanted to smoke a salmon fillet or two while a turkey is smoking, that would be OK. You'd just need to know when you wanted your salmon done, and plan accordingly. The salmon would be hot smoked at the temperature you'd be smoking a turkey, and would take a relatively short time to finish.

If you wanted smoked salmon as an appetizer before the meal, put it in when you start the turkey. But if you want the smoked salmon done at the same time the turkey is done, you could put it in the smoker about 30 minutes before the turkey comes out.

If the salmon isn't done when the turkey's done, it can stay in the smoker a while longer as the turkey rests after it's smoked.

BBQ VS Grilling
by: Ben Molloy

In my experience burgers and fish would be grilled using the grate in the firebox with direct heat, and not smoked (BBQ'd)... Smoking is better for larger cuts of meat like your turkey, chicken, ham, brisket, and ribs.

Of course you can always season your burger meat with liquid smoke to give it some smoke flavor.
