Water Pan-Mesquite Wood

Can I use mesquite wood chips when I smoke my Ribs? I just bought a vertical smoker..do you have to put water in the water pan when smoking ribs or turkey? Is it better to use apple juice?

Sure, you can use mesquite wood for smoking ribs. Its flavor is a little more pronounced than other woods, so don't use a lot. It's always best to use too little smoking wood than too much.

As far as what to use in the water pan, I usually use straight water...hot water in cold weather helps get the smoker up to temp quicker. Apple juice won't do much to add flavor to the food, but some strong seasonings (chopped garlic, etc) can be used to enhance the taste of the ribs or brisket you're smoking.
