Wood chunks or chips better in a vertical propane smoker?

by Mark
(Chicago)

I just purchased a Cabela's 48" vertical propane smoker with a metal box for the wood that sits over the burner. Are chunks or chips better in this type of smoker? Or a mix of both? I have had great results using a mix of apple and cherry chips with hickory chunks in my old Meco electric smoker where I put the soaked wood mix directly on the electric element. By the way, this website is the best I have found to answer many of my questions and give me ideas for new things to try next. Keep up the great work!!!

Wood chips or chunks for smoking

Your best bet is to experiment with both. The chips will tend to burn up quicker due to the increased surface area of the wood, and the air spaces between the chips. But either on should work ok. The main difference will be the rate at which the smoke is released.
