A Message From Santa



(Due to the Midwest ice storms, I've been without electrical power and an internet connection, so I asked my friend Santa Claus to fill in for me this month as guest writer.)

Ho! Ho! Ho! Merry Christmas to you all! Now, after checking my lists (twice, to be exact), I see that you've all been good boys and girls this year. Therefore, you all deserve to read my recommendations for cooking up a fine holiday feast.

As I take to the skies in my reindeer powered sleigh on Christmas Eve, Mrs. Claus will be directing the elves efforts as they prepare several of the jolly good recipes I found here at Smoker-Cooking.com. We all love to eat salmon and prime rib, so the Mrs. will see to it that there will be plenty of those delectable treats ready to feast upon when I return from delivering your gifts this Chrismas Eve!

Smoked Beef Rib Roast
For special occasions or holidays, this smoked beef rib roast recipe is something you really should try. When the rib roast is slowly cooked with a kiss of smoky flavor, the results are incredible. My most dependable elf, Yantzy, made this one for me a couple of years ago, and I've been begging him to make it again for me this year!



Honey Glazed Grilled Salmon
This quick cooking honey glazed grilled salmon steak recipe makes mouthwatering salmon that the entire Claus family enjoys. Our young one, little Santy Claus, says this is his favorite dish of all! Lightly seasoned, then quick-grilled, a honey glaze is brushed on the salmon at the last minute.



Smoky Oven Baked Prime Rib
If the weather isn't cooperating (and when is it here at the North Pole), do what we do and cook your smoky prime rib roast in the oven. I know, I know, it's cheating...but it sure is easy and a great way to free up some time for holiday cheer. Since the elves and Mrs. Claus don't have to mind the smoker as this one is cooking, they have time to play a rousing game of Twister!



Smoked Salmon Chardonnay
This recipe is a favorite of Mrs. Claus'. The rich salmon is marinated in chardonnay wine before being lightly smoked. I think this one will be a nice appetizer when served on crackers before the Christmas feast!



Santa Says Don't Overcook It!



Remote Cooking Thermometers
Nothing turns off my Jolly switch like overcooked, dry salmon and beef prime rib roast do. Whenever me or Mrs. Claus cooks salmon and beef on the grill or in the smoker, we use one of these remote thermometers. Santa says, "Serve Perfect Meat...Use a Thermometer".
