Hello everybody, and a warm welcome to those of you receiving the BlueSmoke Gazette for the first time. It's Memorial Day Weekend, and time for some grillin' and smokin'!



Last Saturday I had a really good time over at my sister's house. In the last issue of the Gazette I said that I planned to smoke a nice beef rib roast, but I ended up grilling a couple of beer can chickens instead. I also made up a mess of grilled stuffed tomatoes that turned out darned good.


To keep us occupied as the chickens danced, we grilled a couple of appetizer dishes that you might like to try. Have a safe and fun weekend, and enjoy the recipes!

Grilled Beer Butt Chicken
I picked a pair of big fat roasting hens for this recipe. The chickens are brined for a couple of hours, then marinated for a couple more. And after a couple more hours in the grill with a beer can full of herbs between their ribs, they are ready to eat. And tasty!

Grilled Stuffed Tomatoes
My sister can't eat tomato seeds, so I made this recipe just for her. The tomatoes are hollowed out and filled with an herb seasoned ricotta cheese mixture. I used the same herbs that were used with the chicken.

Grilled Teriyaki Steak Skewers
This was an easy appetizer to make, and gave us something to do (and eat) while the chickens were grilling.

Grilled Shrimp Skewers
Old Bay seasoning flavors the shrimp, which are pierced with bamboo skewers and grill until just done. Another way to keep me and my brother in law busy while those roasting hens grilled.
