Veggies On The Grill



Hello everybody, and a warm welcome to those of you receiving the BlueSmoke Gazette for the first time. Spring has brought us a few nice rainstorms and lots of sunshine...perfect for those growing vegetables in the garden.



I love this time of the year. The weather is perfect for grilling and smoking all kinds of great foods. As we head into late spring and early summer, there are going to be lots of fresh vegetables available in the stores and coming out of the gardens. Make the best of that great produce with some of these grilled veggie recipe ideas.

Cheese Stuffed Jalapeno Peppers
If you like spicy snacks, these grilled peppers are just for you. Jalapeno peppers are cored, stuffed with a mixture of cream and cheddar cheeses, topped with bacon and grilled. The recipe calls for smoked cheddar cheese, which gives the peppers a really nice flavor. But if you don't want to go to the trouble of making smoked cheddar, regular cheddar will work just fine.

Grilled Whole Onions
Cooking onions until they soften brings their sweet flavor out. When grilling whole onions, remove the centers and fill them with butter before popping them into the grill.

Grilled Potato Wedges
Potatoes are grilled until done, and then topped with a bit of shredded cheese. Pretty darn good eatin'!

Grilled Corn on the Cob
I know that corn isn't in season yet, but it will be before you know it. Nothing beats fresh from the field grilled corn. When grilled with the husks left on, the corn takes on a slight smoky flavor from the charring husks.
