Seasoning The Sparerib Slab

To add great flavor to the meat, rib preparation step 8 seasons the slab with a dry rib rub. The spareribs can also be marinated for that special flavor. For a double flavor whammy, do both. No one's gonna stop ya!

This pair of slabs is going to be seasoned with one of my dry rub recipes, which includes...

1 Tbs onion powder
1 Tbs brown sugar
2 tsp paprika
1 tsp chili powder
1 tsp non-iodized salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp cumin

Just combine the ingredients and mix thoroughly. This recipe makes enough dry rub for one slab of ribs.

You may have noticed that the recipe contains just a small amount of salt in relation to the other ingredients. Since most pork is injected with a preservative brine before being packaged and sold, it should be lightly salted when seasoned to prevent being overly salty.
